UNDERSTANDING FLAVOURS & FUNCTIONS
After 18 years in hospitality learning, experimenting and searching for deeper meaning in flavour, I’ve realised how crucial it is to bring knowledge to the table, especially when it comes to the alcohol-free world.
It’s surprising that, despite all the progress in both kitchens and bars, neither side truly teaches much about nutrition and definitely not alcohol-free. This gap inspired me to start gathering insights, connecting experts, and building a database dedicated to understanding everything that shapes alcohol-free drinks and experiences.
From the fundamentals of fermentation and the link between sugars and alcohol, to exploring adaptogens and other modern ingredients driving the next generation of alcohol-free beverages, this project aims to collect, structure, and share it all.
Through NO+(F)LOW, we’ll also bring this knowledge to life with training sessions for hospitality professionals, helping the industry evolve toward a more mindful and informed approach to flavour. And as things grow, this journey may eventually take shape as a book that brings together everything we discover along the way.
